I had a 3 butternut squash from my CSA that I needed to do something with so soup it is! I looked over a few recipes and decided to wing it, this sometimes works out amazingly well and sometimes not so much, but today it was amazing! This makes about 12 servings so feel free to half the recipe.
3 butternut squash (cubed)
2 onions (chopped)
64oz vegetable broth
1 Tablespoon coconut oil
1 Teaspoon cinnamon
½ Teaspoon cayenne pepper
Salt and pepper to taste
Sauté 2 chopped onions in coconut oil until translucent
Add cinnamon, cayenne pepper, salt and pepper to onions stir around
Add vegetable broth and butternut squash to the pot
Bring to a boil and simmer for 25 minutes or until squash is tender
Blend with immersion blender or blend in a regular blender in batches
